Harvest time
The grapes for our Chardonnay were selected from old vines grown on the sunny slopes high
above the Columbia River.  Aging in both French and American oak gave this wine complexity with
hints of butter and vanilla on a nose of citrus and pineapple.  It is a perfect pairing for chicken, fish
or white pasta dishes.

Cabernet Sauvignon
Cabernet Franc
The long sunny days and cool nights in the Rattlesnake Hills AVA set the stage for these grapes
to develop into a bold full-bodied wine with hearty tannins.  This wine has rich layers of berries
and spice on the palate and a robust bouquet.
Cabernet franc was traditionally grown for blending with Cabernet Sauvignon and Merlot in the
Bordeaux style.  Its soft round mouth feel and ripe fruit flavors account for its recent popularity as a
stand alone varietal.
Dessert Riesling
This elegant dessert Riesling from Washington's Wahluke Slope boasts brisk natural acidity with
12% residual sugar.  The wine's zesty lemon-lime, pear and peach flavors are accompanied by
just the right amount of sweetness to carry the flavors through a long and pleasant finish. The
acid/sugar balance allows the wine to start sweet and finish with refreshing dryness.
Dakota Creek's Carmenere has soft acidity and low tannins which intensify the red berry aromas
and enhance its herbaceous character.  Although part of the Cabernet family, Carmenere is a
lighter, smoother wine with delicate floral features.
Dolcetto, because of its soft tannins, is not intended to age, but rather is intended for youthful
consumption. It is wonderfully fruity with aromas of plums and blackberries.  Originally produced
in the Piedmont area of Italy, Dolcetto has adapted well to the grape growing terroir' of the
Rattlesnake Hills.
Firefighter Red Blend
This blend of Cabernet Sauvignon, Merlot, Syrah, Cabernet Franc, Malbec and Petit Verdot boasts
rich berry flavors nicely framed by smooth polished tannins and a generous finish. Our most
popular blend is produced as a tribute to the men and women who protect our homes and
businesses. A portion of the proceeds will be donated to local residents whose homes and lives
have been devastated by fire.
Jill's Blend
This exotic blend has an earthy chocolate nose, rich tannins and bold flavors of chokecherry and
white pepper. Jill handcrafted this premium wine from the dense residual wine retrieved through
multiple oak barrel rackings.
Elephant Mountain Vineyard in the Rattlesnake Hills has the perfect soil chemistry and hot
summer climate for Malbec to develop lush dark-fruit flavors. Our 2009 Malbec is rustic yet soft,
with a fresh fruity bouquet, balanced palate and a long pleasant finish.
Dakota Creek Merlot is bold yet well-balanced, showing complex aromas of bell pepper and
cherries with just a hint of cinnamon. its fresh acidity evolves into a smooth palate with layers of
berries, leather and spice on the palate and a crisp cherry finish. We give our Merlot extra 'hang
time' in order to develop the ultimate 'jamminess' of flavors.
The grapes for our Pinot Gris were sourced from Sugarloaf Vineyard in the Rattlesnake Hills of
eastern Washington. The wine is crisp, light, and well-balanced with pronounced pear, green
apple and citrus flavors.  Serve chilled by itself, or pair with chicken, salads or seafood.
Pinot Gris
Petit Verdot
Elephant Mountain Vineyard in the Rattlesnake Hills AVA provides outstanding 'terroir' for this
deeply pigmented and aromatic varietal.  Our Petit Verdot has blackberry aromas with rich plum
flavors, well rounded tannins and a smooth finish.  It is full-bodied, earthy and rustic.
Stylistic and 'terroir' based differences emerge in Washington Sangiovese wines. Our
Tuscan-Style Sangiovese has fresh fruity flavors of strawberry and plum with a little spiciness and
just a bit of vanilla-oak flavor.
Sangiovese Rose'
This dry rose' was produced in the French Saignee' method of fermentation where just after
crushing the red grapes, the pink juice was drawn off in order to extract all of the delicate flavors
without imparting the bolder tannins from the skins and seeds.
Our Tempranillo has characteristic flavors of plum, cherry, and strawberry mixed with an earthy
minerality. Tempranillo wines are perhaps one of the most food friendly wines around. Consider
pairing it with tapas, pork, grilled or roasted entrees.
Unoaked Chardonnay
Chardonnay grapes grown in the Columbia Valley provides the foundation for this full-bodied
well-balanced wine.  To showcase the varietal intensity and natural character, Dakota Creek
Winery aged this vintage in stainless steel tanks.  Enjoy this refreshing departure from the buttery
influence of traditional Chardonnay.
White on White
White on White (WOW) is a blend of Viognier and Pinot Gris with just a splash of Chardonnay.  
The combination of the tropical fruit flavors of the viognier with the crisp green apple and pear
flavors of the Pinot Gris and the hint of oak from the Chardonnay results in a wine with multiple
harmonious layers.
The micro-climate on the sunny slopes of Elephant Mountain provides the perfect climate for this
often difficult to grow grape.  At Dakota Creek, we meticulously transform  hand-picked grapes
into a rare wine having a complex orange blossom and ripe apricot bouquet.  This wine has a
crisp mouth feel with layered flavors of tropical fruit.

We gave these grapes from Elephant mountain Vineyard extra "hang time" on the vine, allowing
them to develop robust flavors.  Then we aged this Syrah in a combination of American and
French oak barrels to enhance the deep flavors and soften the natural tannins.  It is a bold yet
unpretentious pairing for sharp cheese, beef or red pasta dishes.
