Cabernet Sauvignon
The long sunny days and cool nights in the Rattlesnake Hills AVA set the stage for these grapes
to develop into a bold full-bodied wine with hearty tannins.  This wine has rich layers of berries
and spice on the palate and a robust bouquet.
Dolcetto
Dolcetto, because of its soft tannins, is not intended to age, but rather is intended for youthful
consumption. It is wonderfully fruity with aromas of plums and blackberries.  Originally produced
in the Piedmont area of Italy, Dolcetto has adapted well to the grape growing terroir' of the
Rattlesnake Hills.
Firefighter Red Blend
This blend of Cabernet Sauvignon, Merlot, Syrah, Cabernet Franc, Malbec and Petit Verdot boasts
rich berry flavors nicely framed by smooth polished tannins and a generous finish. Our most
popular blend is produced as a tribute to the men and women who protect our homes and
businesses. A portion of the proceeds will be donated to local residents whose homes and lives
have been devastated by fire.
Jill's Blend
This exotic blend has an earthy chocolate nose, rich tannins and bold flavors of chokecherry and
white pepper. Jill handcrafted this premium wine from the dense residual wine retrieved through
multiple oak barrel rackings.
Malbec
Elephant Mountain Vineyard in the Rattlesnake Hills has the perfect soil chemistry and hot
summer climate for Malbec to develop lush dark-fruit flavors. Our 2009 Malbec is rustic yet soft,
with a fresh fruity bouquet, balanced palate and a long pleasant finish.
Merlot

time' in order to develop the ultimate 'jamminess' of flavors.
Petit Verdot
deeply pigmented and aromatic varietal.  Our Petit Verdot has blackberry aromas with rich plum
flavors, well rounded tannins and a smooth finish.  It is full-bodied, earthy and rustic.
Sangiovese
Stylistic and 'terroir' based differences emerge in Washington Sangiovese wines. Our
Tuscan-Style Sangiovese has fresh fruity flavors of strawberry and plum with a little spiciness and
just a bit of vanilla-oak flavor.
Dakota Creek
Winery
We gave these grapes from Elephant mountain Vineyard extra "hang time" on the vine, allowing
them to develop robust flavors.  Then we aged this Syrah in a combination of American and
French oak barrels to enhance the deep flavors and soften the natural tannins.  It is a bold yet
unpretentious pairing for sharp cheese, beef or red pasta dishes.
