2005 Firefighter Red tm
This is a blend of Merlot, Cabernet Sauvignon, and Syrah grapes. You will note the
black cherry and ripe berries nicely framed by smooth, polished tannins and a
generous finish. As a tribute to the men and women who protect our homes and
businesses, a portion of the proceeds from each sale of 2005 Firefighter Red will be
donated to North Whatcom Fire & Rescue Volunteer Firefighter's Associations. Wine
critic F. Tessier describes our Firefighter Red blend as "a gutsy, well-proportioned
muscular red with good buns." Wine writer Dan Radil says "At this price (about $17), I
think it is an absolute steal."
2006 Pinot Gris
This refreshing unoaked picnic wine is crisp light and well balanced. Pinot Gris is the
only wine we make that is not crushed at our winery. To preserve the elegant
nuances of pear, apple, peach and spice we have the grape clusters crushed and
pressed near the vineyard and transport the chilled juice to our winery for precise and
delicate fermentation. This is our premier "sunshine wine".
2006 Chardonnay
The grapes for this vintage were selected from old vines grown on the sunny slopes
high above the Columbia River at the Gorge Amphitheater. After barrel fermentation,
the wine was aged in both American and French oak barrels. The pleasant nose of
pineapple and citrus blends well with a mild integration of oak.
2006 Cabernet Sauvignon
Our 2006 Cabernet Sauvignon is big, bold and well balanced, boasting complex
aromas of dark cherry and plum with mild black pepper notes on a soft pleasant
finish. Barrel aging in American oak has smoothed the natural tannins of this varietal.
2006 Merlot
With the 2006 Merlot we have produced a sensational wine that is lush and exotic with
dark fruit flavors and a full body. Its multi-layered palate is followed by a long and
subtle berry finish. We selected a special American oak barrel for aging our 2006
Merlot.
2006 Syrah
National recognition for Washington Syrahs has lead to a wide consumer appeal of
this Rhône varietal in the past few years. Our Syrah grapes have turned into a big,
dark, intensely concentrated wine with aromas and flavors of blackberries, black
currants, roasted coffee and chocolate with a pleasant but bold pepper finish. To
develop the ultimate this fantastic grape has to offer, we chose a mixture of French
and American oak barrels for aging.
2006 Jill's Blend
Associate winemaker, Jill Peck, crafted this layered blend of Merlot, Cabernet
Sauvignon and Syrah from the dense residual wine retrieved through multiple oak
barrel rackings. It has an earthy chocolate nose, rich tannins and bold flavors of fresh
berries and white pepper on the palate followed by a pleasant blueberry finish. The
production of less that 40 cases and will be available at the winery only.
2007 Viognier
Viognier grapes are often difficult to grow, but the unique 'terrior' on the slopes of
Elephant Mountain provide an excellent foundation for this premium wine. By giving it
a very light exposure to American oak we slightly soften its layered flavors of tropical
fruit while preserving its varietal crispness. The wine boasts a complex orange
blossom and ripe apricot bouquet.
2007 Dry Riesling
Our alternative method of vinification of this varietal produced a very dry and fresh
wine with prominent natural acidity. This sturdier style contrasts the typical Riesling
sweetness with lush floral and peach on the nose and mild pineapple on the palate.
