In The Cellar at Dakota Creek Winery
Our "Cellar" is a metal arch building, covered with native soil and bark.  Because it is bermed
and covered, it acts much like a basement or traditional fruit cellar, in that it stays a consistent
50-65 degrees without any heating or air-conditioning.  We currently have over 100 American and
French oak barrels aging in the cellar, as well as three 600 gallon stainless steel tanks
'cold-stabilizing' outside.
